Homemade panettone to be filled with organic pistachio cream

Here is a recipe for preparing a delicious homemade panettone, which you can fill with organic pistachio cream to add a special touch.


Organic pistachio cream
  • 500 g di farina per dolci
  • 200 ml di latte tiepido
  • 150 g di zucchero
  • 150 g di burro morbido
  • 3 tuorli d’uovo
  • 1 bustina di lievito di birra secco
  • Scorza grattugiata di un’arancia e un limone
  • Una presa di sale


In a small bowl, dissolve the brewer’s yeast in warm milk with a teaspoon of sugar. Let it rest until it becomes foamy.
In a large bowl, sift the flour and make a well in the center. Add the sugar, soft butter, egg yolks, grated orange and lemon zest, activated yeast and salt.
Start mixing from the center, gradually incorporating the flour until a smooth dough forms.
Transfer the dough to a floured surface and knead vigorously until smooth and elastic.
Place the dough in an oiled bowl, cover with a damp cloth and leave to rise in a warm place until it doubles in volume (about 2 hours).

After leavening, place the dough back on the floured surface and knead it briefly to eliminate the air.

Form the dough into a ball and place it in a panettone mold. Leave to rise again for about an hour.

Preheat the oven to 180°C and bake the panettone for approximately 40-50 minutes or until it is golden on the surface. Check the baking by inserting a toothpick: if it comes out clean, the panettone is ready. Leave the panettone to cool completely before cutting it.

Cut the panettone into horizontal layers.
Spread a generous layer of pistachio cream between each layer of panettone.
Bring the layers together and spread the pistachio cream on the surface of the panettone.
Decorate with chopped or whole pistachios.
Your panettone filled with organic pistachio cream is ready to be enjoyed!
