Aubergines Sicilian Parmigiana made with organic ready-made cherry tomato sauce

Ingredients

  • 2-3 aubergines
  • 200 g of provola or scamorza cheese
  • 80 g of grated Parmesan cheese
  • some basil leaves
  • 2 bottles of organic Convivia ready-made cherry tomato sauce
  • q.s. seed oil
  • q.s. extra virgin olive oil
  • q.s. salt

Preparation

Fill a bowl with water and salt it with the coarse salt. Cut the aubergines into thin slices and put them in the bowl with the salted water.

Keep them covered entirely in salt water for at least an hour. In this way, the aubergines release a substance and, when cooked, they will be softer and tastier.

Then, take the slices of aubergines out and dry them with paper towels.

Now, they are ready to be fried in a pan with seed oil. After you have fried them, place them in a bowl.

Take a baking dish and cover the bottom with two teaspoons of extra virgin olive oil. Then, start making the first layer with the fried aubergines slices and add a pinch of salt. At this point, add the ready-made cherry tomato sauce. Slice the cheese and add it, with a few basil leaves. Sprinkle everything with grated Parmesan cheese.

Star again with another layer of fried aubergines. Proceed in the same way until all ingredients are finished, keeping in mind to conclude with a layer of fried aubergines covered with sauce and a plenty sprinkling of grated cheese.

Bake in oven at 200 degrees for 40 minutes (if ventilated at 180 degrees for 30-35 minutes). Garnish with some basil leaves.
